Sweet Peas with Prosciutto

Serve your fresh Ontario sweet peas in this Italian inspired side dish.

This is best served hot, but even cold this is a welcome addition to any potluck or buffet table.

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 2 oz. prosciutto, roughly chopped (or substitute bacon)
  • 1 shallot, minced
  • 1 lb fresh sweet Ontario peas (shelled)

Instructions:

  1. Heat oil in a large skillet over medium heat. Add prosciutto and shallot; cook until shallot is soft and prosciutto begins to crisp (6-8 minutes)
  2. Add peas and 1 tbsp. water; cook, tossing, until hot, about 3 minutes. Season with salt and pepper.
