Our neighbours to the south celebrate National Watermelon month in July, when Watermelon is in it's peak harvest. To help them celebrate, all of our recipes this month will feature watermelon as the main ingredient (it's much more versatile than you think!)
In Israel and Egypt, the sweet taste of watermelon is often paired with the salty taste of feta cheese, which is the inspiration for our first recipe.
- 1seedless watermelon
- 2 tbsp olive oil
- 2 tsp lime juice
- 1/2 tsp lime zest
- 1/3 tsp salt
- 1 cup crumbled feta
- 1 cucumber
- Cut seedless watermelon into 4 (6-inch-long, 1-inch-thick) slices. Brush 1 side with oil and grill over high heat, undisturbed, until seared, about 4 minutes.
- Mix olive oil, lime juice, finely grated lime zest, and salt. Toss sliced cucumber in dressing; serve on grilled watermelon with crumbled Feta.
