Grilled Beets with Goat Cheese and Walnuts

High in vitamin A, vitamin C and betaine, beets have been called natures multi-vitamin.

Ingredients:

  • 4 large beets, peeled and sliced into 1/2 inch thick circles (see tip below)
  • 2 Tablespoons Olive Oil
  • 2 Oz Goat Cheese
  • 1/3 cup chopped walnuts
  • 3 Tablespoons Maple Syrup
  • Salt and Pepper to taste

Directions:

Toss the beets in olive oil, season with salt and pepper, and place them on a medium to medium hot grill. Cover the grill. Flip the beets once they get grill marks – 8 to 10 minutes. Continue cooking on the other side until the beets are tender and grill-marked on the other side.

While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
Place cooked beets on a platter or 4 salad plates. Top with crumbled goat cheese and toasted walnuts.

Makes 4 side dish servings.

Tip: Peel & cut beets under cold fast-running water to avoid staining your hands.
